Ingredients

  • 1 1/2 lbs 680 g boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 1/2 cups uncooked long-grain white rice
  • 1 can 10.5 oz / 298 g condensed French onion soup
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 1/2 cups shredded Swiss cheese or Gruyere
  • 1 1/4 cups crispy fried onions store-bought, for the topping
  • 1 tablespoon chopped fresh parsley for garnish (optional)

Method

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Toss the chicken pieces with garlic powder, onion powder, thyme, salt, and pepper.
  3. In the baking dish, stir together the uncooked rice, French onion soup, chicken broth, and sour cream until combined.
  4. Spread the seasoned chicken evenly over the rice mixture, nestling the pieces slightly into the liquid.
  5. Cover tightly with foil and bake for 40 minutes, until the rice is tender and the chicken is cooked through.
  6. Remove the foil, sprinkle the Swiss cheese over the top, and bake uncovered for 5-7 minutes, until melted and bubbling.
  7. Scatter the crispy fried onions over the top and bake 3-5 minutes more, until golden.
  8. Rest 5-10 minutes so the rice settles. Garnish with parsley and serve warm.

Notes

Seal the foil tightly so the rice steams properly, and do not peek during the covered bake. Long-grain white rice only brown and instant rice will not cook in this timing.
